Ingredients:
- 1 tbsp coconut oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp curry powder
- 1 cup dried red lentils
- 3 cups veggie broth
- 3 cups spinach
- Salt to taste
Instructions:
- Sauté onion and garlic in coconut oil.
- Add curry powder, lentils, and broth. Simmer for 20 mins.
- Stir in spinach until wilted.
- Adjust salt and serve with brown rice or naan (optional).
