Ingredients:

  • 1 tbsp coconut oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp curry powder
  • 1 cup dried red lentils
  • 3 cups veggie broth
  • 3 cups spinach
  • Salt to taste

Instructions:

  1. Sauté onion and garlic in coconut oil.
  2. Add curry powder, lentils, and broth. Simmer for 20 mins.
  3. Stir in spinach until wilted.
  4. Adjust salt and serve with brown rice or naan (optional).
