Ingredients:

  • 2 cups diced sweet potatoes
  • 1 can black beans, drained & rinsed
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • 1 tbsp olive oil
  • Gluten-free corn tortillas
  • Optional: avocado, salsa, cilantro

Instructions:

  1. Roast sweet potatoes in olive oil and spices at 425°F for 25 mins.
  2. Warm beans and mash lightly.
  3. Heat tortillas and layer beans, sweet potatoes, and toppings.
  4. Serve warm with your fave sides.
