Ingredients:
- 2 cups diced sweet potatoes
- 1 can black beans, drained & rinsed
- ½ tsp cumin
- ½ tsp smoked paprika
- 1 tbsp olive oil
- Gluten-free corn tortillas
- Optional: avocado, salsa, cilantro
Instructions:
- Roast sweet potatoes in olive oil and spices at 425°F for 25 mins.
- Warm beans and mash lightly.
- Heat tortillas and layer beans, sweet potatoes, and toppings.
- Serve warm with your fave sides.
